Beef Stew:
2 lbs of beef chuck cut into 2 inch cubes
S & P
flour
3 TB. evoo
10 oz. frozen, thawed, drained & patted ry pearl onions
2 TB tomato paste
2 TB. Worcestershire sauce
3/4 cup dry red wine
2 cups low sodium chicken broth
1 can fire-roasted diced tomatoes
4 carrots peeled and cut
3 Yukon Gold potatoes peeled and cut into pieces
Season beef with S & P and dust lightly with flour. Add 2 TB oil to heated pot, then add beef in single layers until browned, transfer to a plate. Add remaining oil, then add onions cook until caramelized, add tomato paste, Worcestershire, wine. Boil until until mostly evaporated. Return beef, add broth and tomatoes. Bring to a boil, cover and transfer to the oven. Cook 1 & 1/2 hours. Then add carrots and potatoes. Cover and cook for abut another hour or until fork tender!
Salad:
Toasted walnuts (1/2 cup)
1/4 cup of evoo
S & P
2 TB sherry vinegar
2 tsp. dijon mustard
variety of lettuce
1 red crisp apple sliced ( I used honeycrisp)
1/2 cup pomegranate seeds
3 oz. Gouda shaved
