Mexican Rajas just got better, at least in my home! Yup! This recipe is my go-to when I have a super, super busy day and want that nostalgic feeling without the heavy lifting in the kitchen. 4 Chicken Thigh
4 cups water
2 cups of rice
1 cup of queso fresco
1/4 cup of queso cotija
1 cup of heavy whipping cream
1 roasted poblano pepper
2 roasted anaheim peppers
1/2 chopped onion
2-1/2 Tbs chicken bouillon
1 Tsp ground cumin
1 Tsp onion powder
1 Tsp garlic Powder
cilantro to taste
