TAIWANESE BEEF NOODLE SOUP – THE BEST RECIPE 牛肉麵 VLOG#001


VLOG#1 This is hands down the best beef noodle soup recipe. EVER #牛肉麵 We have been looking for the best homemade beef noodle soup recipe. This is the only one tastes like ones from a noodle shop. 1.5 lb beef shank cut into 1/2" slices 3 scallions, cut into 2-in pieces 8 slices fresh ginger 3 whole star anise 1/4 cup vegetable oil 6 cloves garlic 2 whole dried red chili 1 medium white onion, sliced 1 piece rock sugar or 1 tablespoon of white/brown sugar 3 tablespoons spicy bean paste 1/4 cup dark soy sauce 1/4 cup rice wine 1/4 cup light soy sauce 2 packets of Oriental spice pack (cinnamon, fennel, and clove) water 1 teaspoon salt 2-3 leaves bay leaf 5-6 servings of flour noodle 2 cups bok choy GARNISH Scallion, finely sliced Fresh cilantro, finely chopped 1/4 teaspoon white pepper PREPARATION & COOKING METHOD: 1. Prepare meat by massaging beef slices with sprinkles of baking soda and place them in a pot of boiling water for 3-5 minutes and remove suds. 2. Remove beef slices from pot and rinse with cold water. Discard suds and meat water from pot, wash and dry thoroughly. 3. Using the same pot over medium-high heat, heat vegetable oil and add scallions, ginger, garlic, chilies, star anise, onion, sugar and spicy bean paste. Cook for 3 minutes 4. Add beef slices, dark and light soy sauces and rice wine. Cook for 5 minutes or until beef slices are well coated with the sauces and wine. 5. Add water until the beef slices are covered, and add 1.5 more cups of water 6. Add bay leaves, salt and spice packets. 7. Once soup comes to a boil, reduce heat and let the soup simmer for approximately 2.5 hours or until beef slices are very tender. 8. In a separate pot, boil water over high heat and cook the noodles according to instructions. 9. Just before serving, add bok choy to the soup, boil for 2 minutes and remove immediately to avoid overcooking. 10. Final step- assembly: Place noodles at the bottom of bowl followed by bok choy and dash of white pepper. Add beef slices and soup, and garnish with cilantro and scallions. ENJOY
