Indian Chicken Curry For Beginners - Bhuna Chicken Recipe - Chicken Kosha
When it comes to an Indian style chicken curry there are countless variations of making it. Each region has its own unique recipe. Today I will be making a spicy dry type of chicken curry commonly called as Bhuna Chicken in hindi or chicken kosha in bengali. “Bhuna” in hindi or “Kosha” in Bengali means to fry the chicken along with spices without adding any water. The chicken will get cooked in it’s own liquid so this curry is more on the dry side, but you can always add water if you want it on the gravy side.

Ingredients required for making chicken curry -
* Chicken with bones - 1 kilo / 2.2 lb
* Onion - 400 gm / 14 oz
* Garlic - 1 large bulb or 20 large garlic cloves
* Ginger - 2 inch length
* Tomato - 130gm / 1 large / 4.5 oz
* Plain, unflavored yogurt (curd) = 5 heaped tablespoons / 5 oz
* Turmeric Powder - ½ teaspoon for marinating chicken and ½ teaspoon for curry
* Kashmiri red chilli powder/ paprika - 1 tablespoon ( you can also use a combination of 2 ½ teaspoons of paprika and ¼ th teaspoon of cayenne pepper)
* Ground Coriander - 1 tablespoon
* Ground Cumin - 1 teaspoon
* Garam Masala Powder - 1 teaspoon
* Salt to taste ( I used 1& 1/2 teaspoons)
* Sugar - 2 teaspoons
* Dried Bay leaf - 2
* Cinnamon stick - one 2 inch length stick
* Green Cardamoms - 6
* Cloves - 4
* Water - as required
* Oil - 6 tablespoons
Method---
- Marinate the chicken with a tablespoon of ginger garlic onion paste, yogurt and little bit of turmeric powder.
- Thinly slice your onions.
- Dice the tomato
- Make the ginger garlic onion paste with little water
- Heat pan add oil
- Add the onion slices as the oil is warming up
- Caramelize the onions
- Add the bay leaves, cinnamon stick, cardamoms and cloves and stir for a few seconds
- Add sugar and stir for a minute
- Add the ginger garlic onion paste. Stir for a few minutes
- Add the marinated chicken with all the marinade
- Stir the chicken on medium high heat till the moisture dries up and oil leaves the sides.
- Add the coriander powder, cumin powder, salt and chilli powder
- Mix the chicken and spices . Cover on low heat
- From time to time uncover and give a stir . See to it chicken is not sticking to the bottom of pan. Add splash of water if it gets too dry. You can add upto 2 cups of water if you want it on gravy side.
- Prick with a knife to check whether chicken has turned tender.
- Add garam masala powder at the end and cover for a few minutes.
Serve with hot rice, peas pulao ,roti or naan.
