Ingredients:
Chicken: 1.360 Kg
For the dry marinade
½ tsp black peppercorn
½ tsp cloves
½ tsp fennel seeds
½ tsp coriander seeds
1 inch cinnamon
1 mace
½ tsp green cardamoms
Nutmeg
½ tsp fenugreek seeds
½ tsp cumin seeds
15g whole mild kashmiri red chilli
1 tsp red chilli powder (hot)
½ tsp orange food colour
½ tsp chaat masala powder
Salt to taste
For the wet marinade:
Juice of one lemon/lime
20g/5 cloves of garlic
40g ginger
1 green chilli
1 tbsp yoghurt
Basting:
Ghee/Clarified butter
Kewra water & Rose water
