Here is a very easy chicken dry roast kerala style. It goes well with appam,idlis,dosas,porotta and chapathi.
Ingredients
500 gm chicken (small pieces)
1 inch piece ginger
12 small onions
4 garlic
1 bunch coriander leaves
ΒΌ tsp turmeric
1 1/2 tbsp coriander powder
1/2 tbsp red chilli powder
1/2 tsp pepper powder
2 cloves
1 stick cinnamon
1/4 tsp fennel seeds
A pinch asafetida
ΒΌ tsp mustard seeds
Curry leaves
1 tbsp Coconut oil
1/4 cup coconut pieces
Salt to taste
Method
1 Roast the coconut pieces in a little oil and keep aside.
2 Grind together a portion of the garlic,coriander powder,turmeric,red chilli powder,fennel seeds, cinnamon and cloves.
3 Heat a pan and add coconut oil to it. Add the mustard seeds and let it splutter.
4 Now add the curry leaves. Add the chopped garlic and ginger and saute for a while.
5 Add the small onions and saute until golden brown.
6 Now add the chicken pieces along with the pepper powder, ground masala,salt and asafetida and mix well.
7 Add very little water so that the chicken does not stick to the pan.
8 Close with a lid and cook the chicken until its tender. Half way thru the cooking time open the lid and let the gravy thicken.
9 Add the coconut pieces to it and remove from fire.
10 Serve hot
