(560g) Ground chicken 1 teaspoon Turmeric Salt to taste 1/2 teaspoon Chili flakes/black pepper 1/2 teaspoon cumin 1/4 bunch Coriander, chopped 1 Onion, finely chopped 2 tablespoons Oil For the sauce: Olive oil 1 tablespoon Ginger, grated 1 tablespoon Garlic, grated 1 teaspoon Curry powder 1 teaspoon Garam masala 1 teaspoon Paprika 1 teaspoon Turmeric Salt to taste 2 tablespoons Tomato paste 1 can (400g) Coconut milk 1 cup (240ml) Chicken stock Directions: 1. Make the meatballs: in a bowl, mix ground chicken, spices, coriander and chopped onion. Form into balls bout 1 inch in diameter. 2. In a large skillet add oil on over a medium heat. Place meatballs in the skillet and brown them for about 1-2 minutes from each side. Remove cooked meatballs from the pan and set aside. 3. Make the sauce: in the same pan heat oil, add curry powder, garam masala, paprika, grated garlic, grated ginger and cook for 1 minute. Add tomato paste and cook, stirring for 1 minute. Add chopped onion and cook for 4-5 minutes. 4. Add coconut milk, chicken stock, salt and stir. Add chicken meatballs, bring to a simmer. Reduce the heat to low, cover and cook for 30 minutes. turn the heat off and add chopped coriander.
