Chicken Breast with Basil Cream Sauce Keto Recipe Cast Iron Skillet


Oh my gosh - TRY THIS! INGREDIENTS • Boneless, skinless chicken breast • About 1 to 1&1/2 cups Half n Half (or heavy cream) • 5 to 6 slices of low sodium, no sugar bacon (or, local!) • 1/2 Tsp Nutmeg • Garlic Powder, Pink Himalayan Salt and Pepper to taste • 2 to 3 Tbs cream cheese • 1/3 Cup +/- Parmesan cheese - the dried kind • 6 to 8 Cherry Tomatoes sliced in half • A few Basil leaves from your plant INSTRUCTIONS • Preheat your oven to 350 degrees • In your oven proof skillet (I love my cast iron) fry your bacon then remove to paper towel • Butterfly your chicken (cut it in half lengthwise) • Season the chicken, as you prefer. I like garlic powder, pink Himalayan salt and pepper! • In the same skillet, utilizing the bacon drippings, sear your chicken on either side • Once seared (usually 5 to 7 minutes at medium high heat) place the oven proof skillet in oven for about 7 minutes, or until chicken comes to proper temperature per your thermometer. • While chicken is baking, chiffonade your basil..just roll it and slice it and chop up your crispy bacon....TRY not to eat it....not that I do..... • Once fully cooked, place chicken on a plate to rest. • In your pan from the oven add the half and half, reducing the temperature to medium/low and simmer. • Add cream cheese. • Add Parmesan and stir. • Add some pepper and the nutmeg, stirring to incorporate. • Taste and if needed, add some PH salt. • While on low simmer, add your cherry tomatoes (slow motion, like me!) • Simmer for about 5 to 10 minutes. • Once your sauce is ready, plate your chicken, spoon the sauce over it and top with your chopped up bacon (that you didn't eat while waiting!) and some sliced, fresh basil. • ENJOY your delicious creation! 1 Boneless-Skinless Chicken Breast: • Calories: 284 • Protein: 53.4 grams • Carbs: 0 grams • Fat: 6.2 grams 3 Slices Great Value Low Salt Bacon • Calories: 120 • Protein: 12.5 grams • Carbs: 0 grams • Fat: 17.50 grams 4 Cherry Tomatoes • Calories: 12.4 • Protein: 0.6 grams • Carbs: 2.6 grams • Fat: 0.1 grams Basil • Calories: 0 • Protein: 0.1 grams • Carbs: 0.1 grams • Fat: 0 grams 1 Cup Half and Half • Calories: 315 • Protein: 7 grams • Carbs: 10 grams • Fat: 28 grams 3 Tbs Cream Cheese • Calories: 150 • Protein: 2.7 grams • Carbs: 1.8 grams • Fat: 15 grams 1/3 Cup Dried Grated Parmesan Cheese in Can • Calories: 160 • Protein: 92.3 grams • Carbs: 0 grams • Fat: 12 grams Spices are not computed as your taste and selection will vary. Average Totals: • Calories: 757.40 • Protein: 12.5 grams • Carbs: 14.5 grams • Fat: 78.8 grams - THIS FAT CONTENT WILL BE HIGHER AS I COOKED THE CHICKEN IN THE BACON RENDERINGS AND ALSO USED IT IN THE SAUCE. I ate this in two portions and this was my daily total of macros as I wasn't hungry for more. I try to eat a larger calorie count, but this was satisfying. It varies day to day. I like to keep my personal carbs at 20 per day or lower, but will sometimes have more or less. This is comfortable for me at this time.
