Chicken Curry is a rich and aromatic dish that my whole family loves!
You can make this chicken curry with bone-in pieces from a whole chicken, or just bone-in pieces of just legs/thighs.
Or for convenience, you can just use boneless pieces of chicken. Obviously, boneless chicken will cook faster, and is my choice when I want to cook a quick curry.
But, a GOOD chicken curry uses bone-in chicken pieces because the bones flavor the gravy.
