Maple Syrup Chicken – Quick and Easy Recipe


This is a recipe I got from Melody Mainville, as one of her Recipes of the Month. Her channel: https://www.youtube.com/user/momsvlog80 The recipe came from Katy Debecks. Her channel: https://www.youtube.com/channel/UCzg1jito305SwBJTFz_oDOg It's quick to prepare, and absolutely delicious! I can see it becoming a regular around here. The recipe: ---------------- 2 tablespoons pure maple syrup 1/4 teaspoon freshly ground pepper 1 tablespoon reduced-sodium soy sauce (I used regular soy sauce) 2 teaspoons lemon juice 1 clove garlic, minced 1 teaspoon minced fresh ginger 2 boneless, skinless chicken breasts Assembly: --------------- Whisk syrup, soy sauce, lemon juice, garlic, ginger and pepper in a small, shallow dish. (Or, as I'll do next time, blend them quickly in a food processor.) Add chicken and turn to coat with the marinade; cover and refrigerate for 2 hours, turning once. Coat an indoor grill pan (or cast iron skillet) with cooking spray and heat over medium heat. Remove the chicken from the marinade (reserving the marinade) and cook until an instant-read thermometer inserted into the thickest part of the breast registers 160° to 165°F, 3 to 5 minutes per side. (These large ones took around 7 minutes per side.) Meanwhile, pour the reserved marinade into a small saucepan and bring to a simmer over medium heat. Cook until reduced by about half, about 4 minutes. (I also deglazed the skillet with a little chicken stock and added that into the sauce) Liberally baste the chicken with the reduced sauce and serve. YUM!!
