Here's the recipe:
MUCHO MATCHA
2 oz. (60ml) Mezcal
½ oz. (15ml) Plum Wine
¾ oz. (22ml) Lemon Juice
¾ oz. (22ml) Matcha Infused Simple Syrup
1 egg white
Amaro
Bitters
Cherrywood
PREPARATION
1. Place an egg white in a shaking glass and do a dry shake (no ice).
2. Add the Mezcal, Plum Wine, Lemon Juice, and Matcha infused Simple Syrup to the egg white and shake again.
3. Drop in some ice and shake a third time.
4. Drizzle some Amaro in a serving glass and strain the mix over.
5. Using a stencil, spray bitters over the foam.
6. Use a smoker to smoke the drink with cherrywood. Enjoy responsibly!
