Here is a side dish I enjoyed growing up. I am making this using traditional ingredients but include some substitutions if you would like to change it to your liking. We will cut the carrots a couple of different ways to make it interesting!

Rainbow Gardens
Carrot Raisin Salad
4 1/2 Cups Carrots
1/3 Cup Raisins
1/4 Cup Sugar
1/3 Cup Mayonnaise
8 oz. Crushed Pineapple w/ Juice
2 Tablespoons Apple Cider Vinegar
1 T Lemon Juice
Optional:
Chopped Black Walnuts & Poppy Seeds
