Prospect Park Potato Salad:
5 lbs white potatoes, peeled/washed
1 seedless cucumber, sliced into small, thin pieces
1 cup Vegenaise
1/4 cup Dijon mustard
1/4 cup olive oil
1/3 cup white vinegar
2 tbsp sugar
1 tbsp dried dill
1 tsp turmeric
1 1/2 tsp salt
1 tsp black pepper
1 large carrot, peeled/shredded
