1/2 bell pepper (any color), chopped
1 cup cherry or grape tomatoes halved (or slice heirlooms when in season)
1 English cucumber sliced
1 avocado peeled, pitted and sliced
1/2 cup kalamata olives sliced into thirds
4 oz feta cheese
Greek Dressing Ingredients:
3 Tbsp extra virgin olive oil
3 Tbsp lemon juice (from 1 large lemon)
1 garlic clove pressed
1/2 tsp sea salt
1/4 tsp black pepper
