A easy pork recipe & quick salad recipe. Replace cannellini beans with chickpeas or substitute rocket for any salad leaves.

Heat pan, cook prosciutto, turning until crisp. Combine pork, oil and basil in a bowl. Toss to coat. Cook pork in same pan for 2-3 minutes each side. Transfer to a plate to rest. Combine tomatoes, rocket and beans in a bowl, drizzle with oil and vinegar. Divide among plates, top with pork, crumble over prosciutto.

Ingredients
3 tablespoons Woolworths Select Spanish Classic olive oil
100g thinly sliced prosciutto, from the deli
2 tablespoons shredded fresh basil leaves
4 pork loin medallions heart smart
2 tablespoons Woolworths Select Balsamic vinegar
400g packet fresh Tomato Medley Mix, halved
120g bag Woolworths Select baby rocket
420g can Woolworths Select cannellini beans, drained and rinsed
Extra basil leaves, to garnish
Directions:
1. Heat 1 tablespoon of the olive oil in a large frying pan. Add the prosciutto fry on both sides until golden. Transfer to a paper towel-lined plate. Place pork medallions, 1 tablespoon olive oil and basil in a large bowl. Season. Toss to coat.
2. Heat same frying pan over high heat. Cook pork for 2-3 minutes each side. Transfer to a plate. Rest 5 minutes.
3. Combine tomatoes, rocket and beans in a large bowl. Season. Drizzle with remaining olive oil and balsamic vinegar. Slice pork. Divide salad among plates, top with pork. Scatter with crumbles prosciutto and extra basil leaves.
Tip1: Pork medallions are a lean white meat and low in fat
Tip2: You can replace cannellini beans with chickpeas
Tip3: You can substitute the rocket with any salad leaves.
