Ingredients 1 pork loin roast (2.5–3 lbs) 2 tbsp olive oil 3 cloves garlic, minced 2 tbsp honey 1 tbsp Dijon mustard 1 tsp dried thyme (or 1 tbsp fresh) 1 tsp dried rosemary (or 1 tbsp fresh) 1 tsp paprika 1/2 tsp black pepper 1/2 tsp salt 1/4 cup chicken broth or apple juice How to Make It 1⃣ Prep the Pork Pat roast dry with paper towels. Mix olive oil, garlic, honey, Dijon, thyme, rosemary, paprika, black pepper, and salt. Rub mixture all over the pork. 2⃣ Sear (Optional, but recommended) Heat a skillet over medium-high heat. Sear pork 2–3 minutes per side until browned. Place in a roasting pan or foil tray. 3⃣ Roast Preheat oven to 350°F (175°C). Pour broth (or apple juice) into the bottom of the pan to keep things moist. Roast 1 hour to 1 hr 20 min, or until internal temp reaches 145°F (63°C). 4⃣ Rest Remove from oven and let rest 10 minutes before slicing — this keeps it super juicy. 5⃣ Serve Slice and spoon pan juices over the pork. Garnish with fresh herbs if desired.
