Beef and Rice Taco Bowls
Sharing a quick and easy recipe that is flavorful, affordable, and packed with protein! I seasoned the beef with simple taco seasoning and made cilantro lime cauliflower rice. This is a perfect idea for your next meal prep or weeknight dinner! Enjoy!

Seasoned Beef
Ingredients:
-2 lbs lean ground beef
-1/4 cup low-sodium taco seasoning
-1/4 cup water
-1 tsp olive oil
Instructions:
-heat a pan on high heat and add oil
-brown the beef and break apart; cook until no more pink
-add in taco seasoning and water; mix well before turning off the heat
Cilantro Lime Cauliflower Rice
Ingredients:
-24 oz. (2 small packages) of cauliflower rice
-1/4 cup finely chopped cilantro
-juice of 2 limes
-1/4 tsp salt
Instructions:
-cook cauliflower rice according to package instructions
-add all ingredients into a large bowl and mix well
Corn and Beans
Ingredients:
-1 15-oz. can black beans, rinsed
-1 15-oz. can yellow corn
-2 cups water
-1/4 tsp salt
Instructions:
-heat a small pot on medium heat and add all ingredients
-mix well, cover, and simmer for 5 min before draining
Spicy Lime Mayo Sauce
Ingredients:
-1 cup Greek yogurt or mayo
-hot sauce of your choice
-1/2 tsp garlic powder
-juice of half a lime
