Peaches are a southern staple! I even had peach trees in my backyard growing up. Even though they didn’t yield much, the fact that my grandfather would shoot the squirrels trying to steal the few peaches we did have, makes me a Georgia Girl even the more.

Peach Cobbler Salad Recipe
Ingredients:
1 oz baby spinach
2 large ripe peaches
2 tablespoons almond butter
1/2 teaspoon kosher salt
2 tablespoons raisins
2 tablespoons pecans
Directions:
Create a bed of spinach on top of a salad plate.
Core the peaches, the cut the remaining flesh into slices.
Fan the peach slices evenly over the bed of spinach. This may call for death defying second layer of peaches.
Drizzle on the almond butter in a lattice pattern.
Scatter the salt, raisins, and pecans about the top of the salad like you just don’t care!
Salad #2 is done. Eat up.
