#shorts Superior Chicken & Rice ? 2 cups basmati rice 3 cups stock or water (add more salt if water) 4 chicken thighs 1 Tbsp olive oil Seasonings: 1 tsp chili powder, paprika, garlic, onion 1/2 tsp rosemary, thyme, oregano Salt to taste Cook the chicken thighs 1/2 way through, remove them and add the rice. Add your stock or liquid and re add the chicken. Adjust for salt at this time! Bring everything to a boil, cover and cook for 20 minutes or until chicken is cooked through! Finishing touches: Chop everything as fine as you want! Cherry tomatoes Cucumbers Kalamata olives Sun dried tomatoes Jalapeño Mint Arugula Feta cheese
