#threeriverschallenge #threerivers #homecanning #chicken #dinner I've got five easy and delicious meals using canned chicken or what people call ugly chicken. It's beautiful to me because I can made so many delicious meals with it! I'm doing the three rivers challenge this month so I'm using a lot of my home canned items to use up to make room for more so I'm giving you some of our new favorite ways to use ugly chicken! I hope you enjoy! Alfredo sauce Ingredients 4 tablespoons butter 2 large garlic cloves (minced) 1/4 cup all purpose flour 3 cups whole milk 2 cups freshly grated parmesan cheese 1/2 teaspoon each salt, and pepper Melt butter then add flour and cook for a few minutes Add minced garlic or garlic powder Then add the milk and stir until smooth Then add in parmesan salt and pepper and stir to combine. Add in chicken Simmer for a few minutes Crockpot Stacked enchiladas 2 Cups chicken 1 cream of chicken soup 1 15-ounce can black beans, drained and rinsed 1 cup corn kernels, frozen, canned or roasted 1 cup salsa, homemade or store-bought 1 4.5-ounce can Old El Paso™ chopped green chiles, drained 2 teaspoons Old El Paso™ taco seasoning mix 1 10-ounce can Old El Paso™ mild enchilada sauce, divided 4 9- inch flour tortillas 2 cups shredded Mexican blend cheese, divided Combine everything but the tortillas Mix together Spray crockpot layer tortillas on bottom of crockpot layer 1/3 of chicken mixture layer more tortillas layer until you have no more chicken mixture then top with cheese and cook on low for 3 hours Crockpot Chicken chili 1 jar chicken (2 cups) 1 can rotel 1 block cream cheese 1 can corn 1 can mexican corn 1 can beans (black, pintos or great northern beans) taco seasoning to taste salt and pepper Combine all in crockpot cook 6 hours on low 3 hrs on high TikTok Tortellini recipe Ingredients ▢2 cups chicken (1 jar) ▢½ small onion diced ▢1 bag fresh spinach ▢28 ounces canned diced tomatoes with juice ▢8 ounces cream cheese cubed ▢1 teaspoon Italian seasoning ▢16 ounces frozen tortellini ▢3 cups chicken broth ▢¼ cup parmesan cheese and shredded cheese Instructions Place all ingredients in a 6qt slow cooker. Cook 2 ½ to 3 ½ hours on low. Top with parmesan cheese if desired and serve. Slow Cookers will vary. This takes just about 3 hours in a slow cooker, check your tortellini at 2 1/2 hours to make sure it doesn't overcook. If you'd like more of a soup, add more broth.
