Ingredients (4 Servings)
- 400g Raw Chicken Breast & 400g Raw Chicken Thighs (skinless and trimmed)
- 5 Garlic Cloves Minced
- 2 tsp Oregano
- 2 tsp Paprika
- 2 tsp Onion Powder
- 2 tsp Salt & Pepper
- 100g Nando’s Medium Peri Peri Marinade (Brand: Nando’s)
- 20g Light Butter for cooking (Brand: Lurpak)
- 240g Uncooked/540g Cooked Macaroni
Creamy Peri Peri Cheese Sauce
- 1/2 Medium Onion finely chopped or Chopped Garlic
- 2 tbsp Tomato Paste
- 300ml Skimmed Milk
- 180g Light Cream Cheese
- 40g Low Fat Cheddar
- Extra Seasoning to taste (Salt, Pepper, Onion Powder, Oregano, Paprika)
- 50g Peri Peri Medium Hot Sauce (Brand: Nando’s)
- 100ml Pasta Water
- Garnish with Parsley
Important Cooking Notes
- Marinate the chicken for 30 mins or overnight for best flavour
- You can use all chicken breast or thighs, i chose to mix to have extra flavour
- Make sure yoo trim some of the fat from the chicken thighs
- Cook the chicken on medium high heat for 4-5mins each side till you get a nice char
- Make sure you let the chicken rest for 5 mins before chopping into cubes
- When making the sauce, add everything on low heat so the milk and cheese doesn’t split
- Mix everything till creamy and cheesy then remove from the heat and add the cooked macaroni
