Cheesy Chicken Skillet! . This weeknight wonder will have you asking for more! . Recipe: Cube up 1.5 lbs of chicken. Season with salt, pepper, garlic, paprika, oregano, and chili powder. Sear on all sides in a large skillet. Chop up two pounds of potatoes. Boil in salted water for six min. Chop a head of broccoli and boil for 2 min. Remove chicken from pan. Drop in a diced up onion and a handful of minced garlic. Deglaze pan with a cup of chicken stock. Once onion and garlic is softened, about 5 min, add back in the potatoes, broccoli and chicken. Cover with 1 cup of heavy cream. Mix well. Top with 8oz of shredded cheddar. Broil on high for 3-4 min, until golden brown.
