Prepare Pickled Chillies in Vinegar: -In a bowl,add green chillies,hot water,mix well & let it rest for 2-3 minutes then strain,add vinegar, pink salt,sugar,mix well & set aside. -In a frying pan,heat cooking oil & fry boiled rice on medium flame until light golden & crispy. -In the same oil,fry garlic on medium flame until golden & crispy. -In a serving bowl,add cooked chicken,fresh coriander,fried rice,prepared clear soup,fried garlic,pickled green chilli & serve hot! Recipe in Urdu: Ajza: Prepare Clear Soup: -Water 8 Cups -Chicken with bones 250g -Chicken fillet 1 -Lemon grass 2 stalks -Adrak (Ginger) 2 slices -Pyaz (Onion) 1 small -KaffIr lime leaves 3-4 -Hara dhania (Fresh coriander) leaves handful -Himalayan pink salt ½ tsp or to taste -Sugar 2 tsp -Soy sauce 2 tsp -Lemon juice 2 tbs -Fish sauce 1 tsp -Thai red chillies sliced 2 -Chicken stock cube 1 Prepare Pickled Chillies in Vinegar: -Hari mirch (Green chillies) 6-7 -Hot water 1 Cup -Sirka (Vinegar) 4 tbs -Himalayan pink salt ¼ tsp -Sugar ¼ tsp -Cooking oil for frying -Chawal (Rice) boiled ½ Cup -Lehsan (Garlic) chopped 3-4 tbs -Hara dhania (Fresh coriander) Direction: Prepare Clear Soup: -Pot mein pani,chicken bones & chicken fillet daal ker ubal lein aur scum ko remove ker lein. -Lemon grass,adrak,pyaz,kaffir lime leaves,hara dhania,pink salt,cheeni,soy sauce,lemon juice,fish sauce,thai red chillies & chicken stock cube daal ker partially cover ker lein & halki aancch per 25-30 minutes k liya paka lein. -Chicken pieces ko nikal ker shred ker mein aur chicken fillet ko pieces mein cut ker lein phir soup ko strain ker k side per rakh dein. Prepare Pickled Chillies in Vinegar: -Bowl mein hari mirchein aur garam pani daal ker achi tarha mix ker lein aur 2-3 minutes kliya rest dein phir strain ker lein,sirka,pink salt aur cheeni dal ker ache tarhan mix ker lein & side per rakh dein. -Frying pan mein cooking oil garam karein aur boiled chawal ko darmiyani aancch per light golden & crispy ho janay tak fry ker lein. -Usi oil mein lehsan daal dein aur darmiyani ancch per light golden & crispy ho janay tak fry ker lein. -Serving bowl mein cooked chicken,hara dhania,fried chawal,tayyar soup,fried lehsan aur green chilli pickle daal ker garam serve karein!
