Reduce heat to low, cover and simmer for 15 minutes. Remove from heat and set aside for 5 minutes. In a large bowl, combine quinoa, peppers, artichoke hearts, spinach, olives and feta. Top with olive oil, lemon juice, Greek seasoning and fresh parsley. Stir to combine. Enjoy!
