Milk or White chocolate ganache recipe:
the general rule is to add one third as much cream as you have chocolate. So if you have 90 grams of white chocolate or 90 grams of milk chocolate, then you would add in 30 grams of heavy cream or whipping cream.
For dark chocolate, you would add half the amount of cream as you have chocolate. For example, if you have 100 grams of dark chocolate, then you would add 50 grams of heavy or whipping cream.
