Delicious & Healthy Salad Recipe + Food shopping at the Farmers Market


This salad is my obsession lately! Sooo flavorful and for those who miss meat, this is a perfect healthy vegan meal for you!! I hope you guys enjoy ;-) I'm on Instagram : https://www.instagram.com/shinewithplants/ My Blog : http://shinewithplants.com/ Salad ingredients 1 small head of Lettuce (chopped) 2 Cucumbers (spiralized into noodles) 2 Carrots (grated) 1/3 to 1/2 beet (spiralized into noodles) Mushrooms (I used cremini, shiitake, oyster, king trumpet mushrooms) 1 small red onion (chopped) 1/2 of an avocado Approximately a handful of chopped chives 1 garlic clove Use the garlic, chives and a lil bit of water to slightly cook the mushrooms. I usually cook them for about 10 minutes or so. You can also season them with any spices you desire and salt. Salad dressing 1/2 cup cooked chickpeas 2 tablespoon regular tahini The juice of 1 large lemon (approximately 5 tablespoons) 5 tablespoon of coconut amino (optional, you can add more water instead) 1 and 1/2 tablespoon mustard 1/2 teaspoon cayenne 1 teaspoon curry powder 1/3 teaspoon pink himalayan salt 1/4 cup of water Blend it up until smooth and poor it on top of the salad.
