Summer is the perfect time to dress up some healthy salads! Check out 3 of my favorites:
Peach Caprese Salad:
- 1 Peach
- 1 Heirloom Tomato
- 1 log Mozzarella Cheese
- Fresh Basil
- Balsamic Glaze
Watermelon Arugula Salad:
- 1/4 small Watermelon
- 1/4 Red Onion
- Fresh Mint
- 2 Tbsp Olive Oil
- 1 Tbsp Dijon Mustard
- 1 Tsp kosher Salt
- Honey
- 1 Lemon's Juice
- Black Pepper
- 2-3 cups Arugula
- 1/2 cup Feta Cheese
Corn Avocado Feta Salad:
- 2 Ears Corn
- 1/4 Red Onion
- 1 cup Grape Tomatoes
- Fresh Basil
- 2 Tbsp Olive Oil
- 1 Tbsp Dijon Mustard
- 1 Tbsp Champagne Vinegar
- 1 Tsp kosher Salt
- Honey
- Black Pepper
- 1 Avocado
