I found the fat free coconut milk recipe on this channel - https://www.youtube.com/user/thevegancorner Curry Sauce Ingredients: 1 cup fat free coconut milk - see recipe here: https://www.youtube.com/watch?v=TWd0tXPGDvM&list=PLZI83uWtweM3J--zpWqjsmOd1sdT-uA6W 1/3 cup coconut pulp leftover from making coconut milk 1-2 cups cherry tomatoes 1 stalk celery 1/4 cup sundried tomatoes half tsp cumin 1/4-1/2 tsp chill powder half tsp garam masala half tsp curry powder juice of half a lemon small piece fresh ginger 1 green onion 1 date Cauliflower Rice: 1 head of cauliflower, pulsed into rice like pieces in blender or food processor Other Ingredients: (exact quantities are not important, just add as much as you want) chopped carrots chopped celery thinly sliced mushrooms 1 package jackfruit, chopped into bite size pieces 1 package durian, sliced into bite size pieces Directions: Blend all sauce ingredients. Pour into large bowl. Add remaining ingredients, stir, serve over cauliflower rice...DEVOUR!!
