Ingredients for Mutton Karahi:
Oil 1 cup
Mutton pieces (mix) 1 kg
Ginger Garlic paste 1 tbsp
Salt to taste
Water 1 ½ cup
Cloves 4-5
Cinnamon stick 1 inch
Black Cardamom 1
Green Chili paste 1 tbsp
Red Chili Powder 1 tsp
Red Chili flakes 1 tsp
Turmeric powder 1 tsp
Black pepper powder 1/2 tsp
Coriander Powder 1 ½ tsp
Tomatoes cubes 4 large
Yogurt 1/2 cup
Ingredients for Tandoori Chicken Sticks:
Chicken cubes 700 g
Yogurt 2 tbsp
Ginger Garlic paste 1 tbsp
Salt to taste
Red Chili Powder 1 tsp
Tandoori Masala 2 tbsp
Lemon juice 1 tbsp
Black pepper powder 1/2 tsp
Garam masala powder 1/2 tsp
Orange food color 1/4 tsp
Red Bell pepper (cubes) as required
Green Bell pepper (cubes) as required
Yellow Bell pepper (cubes) as required
Oil (for grilling) as required
Ingredients for Garnish:
Freshly chopped Coriander as required
Chopped green chilies as required
Ginger thin strips as required
Directions for Mutton Karahi:
In a karahi heat oil and add fresh mutton pieces and cook them for 7-8 minutes or it until changes color.
Add ginger garlic paste and cook for another 2-3 minutes.
Add salt and give it a good mix. Add water, mix and cover with lid for about 10-15 minutes or cook until 80% water dries out on low flame.
Now, add cinnamon, black cardamon, and cloves and cook for 2-3 minutes.
Add green chili paste and cook for 2-3 minutes.
Now add all the spices: red chili powder, red Chili flakes, Turmeric powder, coriander powder, black pepper powder, and cook for 3-4 minutes scraping the sides of the karahi side by side.
Now add tomato cubes and cook until tomatoes become soft and oil separates.
Lastly add Yogurt and cook for 10-15 minutes on medium flame and until oil separates and gravy is 70-80% dried.
Transfer in a dish and garnish with coriander, green chilies, and ginger.
Directions for Tandoori Chicken Sticks:
In a bowl add chicken, yogurt, ginger garlic paste, salt, red chili powder, tandoori masala, lemon juice, black pepper powder, garam masala powder, orange food color and mix well and set aside for 30 minutes for marination.
Thread them on a wooden skewer in such a way that 3 different bell peppers are used twice after each chicken cube.
Now preheat and grease grill pan, grill your skewers from each side until fully cooked. Set aside.
Serve hot with Mutton Karahi, raita, salad, roti, naan and mainly Coca-Cola.
