It might seems a bit weird to put chocolate into a savoury dish, but it's quite common in Mexico and South America, and the combination of chocolate and chilli is wonderful. My chocolate chilli chicken recipe is a simplified version of the Mexican chocolate chicken mole. It's also similar to Venezuelan chocolate chicken. Using chocolate or cocoa in cooking gives a rich dark colour, luscious mouth-feel and incredible depth of flavour.
