INGREDIENTS
1.5 lbs (680 g) chicken breast
1/2 cup (65 g) flour
1/2 tsp salt
1/2 tsp black pepper
2 large eggs plus 3 Tbsp cold water (for egg wash)
1 cup (125 g) plain bread crumbs
1/4 cup (22 g) pre-grated parmesan cheese
cooking oil for shallow fry
20 oz to 24 oz (590 ml to 709 ml) pasta sauce
4 oz fresh mozzarella cheese
4 oz low moisture mozzarella cheese
2 oz parmesan cheese
PASTA SAUCE INGREDIENTS
Two 28 oz (794 g) cans peeled San Marzano tomatoes
1/3 cup (78 ml) olive oil
a handful of fresh basil
3 cloves garlic
pinch of crushed red pepper flakes
salt and pepper to taste
