Chicken Biryani
Ingredients required for chicken marinade
1 kg chicken (cut into medium size)
6 cloves
6 green cardamom
3 black cardamom
2 star anise
1/2 piece of nutmeg
1” cinnamon stick
10 black peppercorns
1 tsp cumin seeds
4 cloves garlic
1” ginger piece
1 green pepper chilly (not spicy)
1 lime juice
1 lemon juice
1 cup yogurt
Handful cilantro
Handful mint leaves
1/3 cup oil ( I’ve used 1/2 cup oil)
1-2 pepper chillies
1 1/2 tbsp kashmiri chili powder
1 tsp coriander powder
1 tsp cumin powder
1/4 tsp turmeric powder
1 1/2 tsp salt
1/2 tsp cardamom powder
1 large fried onion (reserve some for garnish)
Other ingredients required
2 cup basmati rice (soaked for 30 mins)
water
1 tbsp salt
2 bay leaves
2-3 tsp oil
1 tbsp rose water
1/2 tsp food colour
1 tsp kewra water
3-4 tbsp mint leaves
3-4 tbsp cilantro leaves
1 green pepper chilly (not spicy)
2 tbsp ghee
