Welcome back to OUR kitchen. I’m so excited to have James back in the kitchen. He is showing us another amazing recipe. It’s very rich and filling. The serving size he is making would be perfect for 4 servings. If you need more or less you can simply adjust the recipe. This is definitely a family favorite recipe!
Stuffed Jumbo Shells:
Ingredients:
2 boneless, skinless chicken breast or 4 chicken tenderloins
Jumbo shells
1 bag of frozen broccoli florets
1 jar of Alfredo sauce
Finely shredded Parmesan cheese
Finely shredded Mozzarella cheese
1 TBS Minced Garlic
2 TBS of butter
In a skillet, combine butter and minced garlic. Melt butter on low heat.
Cut up chicken breast into small bites and add to pan with butter and garlic. Cook chicken until done. Once your chicken is done, add in the Alfredo sauce and let simmer on low heat. Stir occasionally to avoid burning or scorching. After you have let your chicken simmer in the Alfredo sauce, pour into a large mixing bowl. Add in your frozen broccoli. (Be sure to cut up the larger pieces of broccoli to bite sizes.) Once this has been done, add in 1/4 cup of finely shredded Parmesan cheese and stir until evenly mixed. At this point, your shells should be done and slightly cooled by now. Take a shell and add 2 to 2.5 tablespoons of mixture to shells and place in a casserole dish. After you have filled all your shells, lightly sprinkle additional Parmesan cheese on top. Drizzle with more Alfredo sauce followed up by Mozzarella cheese.
Place in oven that has been preheated to 350. Let cook until all the cheese is melted and everything is heated completely (approximately 15-20 minutes).
Remove from oven and serve. We serve with garlic bread.
**As you are cooking chicken, boil your shells until done. Stir frequently to avoid them sticking to the pot.
