Chicken Roast Recipe | Bengali Style Chicken Roast | Spicy Chicken by Culinary Eats & Travelling


Chicken Roast is a very spicy recipe with simple ingredients which are easily available in every kitchen. This recipe is served as a starter in many occasions like a formal invitation for guests or a wedding meal or birthday parties. This is a very popular dish and very easy to prepare at home. I used here curd, and spices. You can use ingredients of your choice that you have in the kitchen. Try this recipe and enjoy with your family. Ingredients: - For marinating- Chicken leg pieces 2 Red chili powder ½ tsp Turmeric powder ½ tsp Salt ½ tsp Curd 2 tbsp Ginger 1 inch Garlic 4 cloves Dry red chili 3 For gravy- Ghee 2 tbsp Sunflower oil 2 tbsp Bay leaf 1 Cinnamon stick 1 inch Green cardamom 1 Black cardamom 1 Mace 1 string Cloves 2 Black pepper 6 Onion 2 medium (sliced) Red chili powder ½ tsp Curry powder 1 tsp Salt to taste Turmeric powder ½ tsp Preparation: - At first, make a smooth paste with garlic, ginger, dry red chili and little water. Then marinate chicken leg pieces with red chili powder, turmeric powder, salt, curd, ginger-garlic-dry red chili paste and keep aside at least 1 hr. Now heat 1 tbsp oil and 1 tbsp ghee in a kadai. Then fry sliced onion until it turns golden. Now grind ½ fried onion into a smooth paste in a mixer. And keep ½ fried onion for garnishing the chicken at the later stage. Now heat more 1 tbsp oil and 1 tbsp ghee in a kadai. Then add bay leaf, cinnamon, green cardamom, black cardamom, black pepper, cloves, mace. When it sizzles, add marinated chicken leg pieces and fry until golden. Then add marinated masala and cover the pan with a lid. Fry for 10 min and flip the chicken from time to time. Then add fried onion paste and mix well. Now add red chili powder, curry powder, turmeric powder, salt and mix well again. Cover the pan with a lid and cook for 20 min on low flame. Now Chicken Roast is ready to serve. Garnish with fried onion and serve with fried rice or biryani or naan.
