Summer is the perfect time to dress up some healthy salads! Check out 3 of my favorites:

Peach Caprese Salad:
– 1 Peach
– 1 Heirloom Tomato
– 1 log Mozzarella Cheese
– Fresh Basil
– Balsamic Glaze

Watermelon Arugula Salad:
– 1/4 small Watermelon
– 1/4 Red Onion
– Fresh Mint
– 2 Tbsp Olive Oil
– 1 Tbsp Dijon Mustard
– 1 Tsp kosher Salt
– Honey
– 1 Lemon’s Juice
– Black Pepper
– 2-3 cups Arugula
– 1/2 cup Feta Cheese

Corn Avocado Feta Salad:
– 2 Ears Corn
– 1/4 Red Onion
– 1 cup Grape Tomatoes
– Fresh Basil
– 2 Tbsp Olive Oil
– 1 Tbsp Dijon Mustard
– 1 Tbsp Champagne Vinegar
– 1 Tsp kosher Salt
– Honey
– Black Pepper
– 1 Avocado
