Recipe of Malai Koftay:
For Koftay
Chicken Half KG
Onion 1 Medium Size
Yogurt 1 TBS
Cheese 50 gm
Ginger & Garlic Paste 1 tsp
Green Chili 3
All Spices Powder 1 tsp
Coriander Powder 1tsp
Half Lemon Juice
Salt 1/2 tsp OR To Taste
Roasted Gram Flour 2 TBS
Coriander Leaves 2 TBS
Oil 1 tsp
Egg White 1
Chop All Above Ingredients Well
Apply Oil On Palm
Make Balls (Koftay)
FRY FROM BOTH THE SIDES ON MEDIUM FLAME UNTIL GOLDEN BROWN

For Gravy
Oil 1 Cup
Cloves, Cardamom, Cinnamon 2 Each
Cumin Half tsp
Saute
Onion Paste 1
Fry Until Golden Brown
Ginger & Garlic Paste 1 TBS
Tomato Paste 2
Cover & Cook For 5 Minutes
Red Chili 1 tsp
Turmeric 1/2 tsp
All Spices Powder 1 tsp
Coriander Powder 1 tsp
Salt To Taste
Yogurt Half Cup
When Oil Separates Add Koftay
Mix Well & Don’t Use Spoon
Turn Balls After Two Minutes
Sprinkle Fresh Coriander
Fresh Cream Half Cup
Mix It Slowly

Oil 1.5 Cup
Chicken Half KG
Fry Well Until Light Brown On High Flame

Step #2
Ginger Garlic Paste 1 TBS (Add 2 TBS Water In It)
Fry Well On High Flame

Step #3
Turn Flame On Medium
Salt 1 tsp OR To Taste
Mix Well
Tomatoes 4-5 (Cut In Four Pieces)
Cover With The Lid And Leave For 10 Minutes

Step#4
Remove Tomatoes Skin
Mix Well
Chill 4-5
Black Pepper 1-1.5 tsp
Garnish With Ginger
Chili
Coriander Leaves
Coriander Sticks (Thin Size)

Tips to Make Original Charsi Karahi:
Always use iron wok.
Fry chicken on high heat until it changes the color to a light golden brown.
Never add any spice before frying the chicken.
Remove tomatoes’ skin.
Only add black pepper to make it spicy.
Use coriander sticks too for the garnishing.
