?Chettinad is famous for it flavour bursting dishes & one such popular dish being Chettinad Chicken gravy. Whole spices are dry roasted & freshly ground to powder. This goes well with Chapathi, Roti, Phulka, Naan, Rice or even Dosa, pulav & Biryani. Pretty similar to regular Chicken gravy but fresh ground spices gives a unique taste to the dish.
Ingredients: Serves 4
Chicken Marinade:
* 1/2 kg Chicken
* 1/2 tsp Turmeric powder
* 1/2 tsp Chilli powder
* Salt needed
* 2 tsp Lemon juice
Masala to roast and grind: Chettinad masala
* 1.5 tbsp Coriander seeds
* 1 tsp Cumin seeds
* 1 tbsp Fennel seeds
* 3/4 tsp Black pepper corns
* 4 Red Chilli
* 1 inch pattai
* 4 cloves
* 4 Green Cardamom
* 1 star anise
* 1 Mace
* 2 Green Cardamom
* 1/2 cup Grated Coconut
Other Ingredients:
* Oil
* Curry leaves
* 1 big Onion
* 1 tbsp Ginger Garlic paste
* Salt needed
* 1 big or 2 small Tomatoes
* Coriander leaves to garnish
Notes:
+ Dry roast the spices till golden brown. Do not burn it. Use Medium heat only
+ Adjust Red Chilli or Chilli powder according to spice levels
+ I have used very less oil in this recipe. Restaurants use more to get oil on top.
