Chicken Liver Pepper fry/ Chicken Liver fry is an simple non vegetarian recipe which can be prepared real quick. its spicy taste & aroma is a nice treat & it goes well with Sambar rice, Curd rice or just rasam rice. If you are non veg foodie & like the chicken liver do not miss it :) Ingredients: ************* Chicken Liver- 400 grams Red chilli powder- 1 tsp Coriander powder- 1 tsp Turmeric powder- 1/4 tsp Ginger garlic paste- 1 tsp Pepper corn- 1 tbsp Cumin seeds- 1 tbsp Fennel seeds- 1 tsp Dry red chillies- 3 Onion- 2 Curry leaves Coriander leaves Salt Gingelly oil- 3 tbsp Preparation: ************ Take 400 grams chicken liver, use water & vinegar to wash it clean. Salt/turmeric powder can also be used to wash it. Chop it into small pieces, add 1 tsp red chilli powder,1 tsp coriander powder, 1/4 tsp turmeric powder, salt,1 tsp ginger garlic paste.Mix it well & marinate for 20 mins. While the liver gets marinated prepare a masala powder. In a heated dry pan, add 1 tbsp pepper, 1 tbsp cumin seeds & saute till aroma comes out of it. Maintain low flame. Once its roasted, switch off the flame & allow it to cool down. Grind it in a mixer to get a coarse consistency powder. In the same heated Pan, add 3 tbsp oil gingelly oil once its heated add 1 tsp fennel seeds, 3 red chillies, curry leaves, 2 finely chopped onions & saute well. Sauteing these ingredients in gingelly oil will give a nice aroma & taste to this dish. Once onion is cooked to half consistency( light golden brown) add the marinated liver to this & saute well. Liver will cook really quick in 10 to 15 mins. After adding the Liver, saute for 2 mins without adding any water. Check the salt level & add it if required. Add 1/4 cup water to this & mix it well. Close the lid & boil it for 5 mins. Then open the lid & cook it till the water completely dry. Takes about 7 mins for this. At this stage add 1 tsp masala powdered prepared earlier, if you want it to be more spicy add 1 more tsp & mix it well & saute it for 2 more mins. This will go well with Sambar rice, Curd rice , just rasam rice. it will be really delicious. Spicy & tasty chicken Liver Pepper fry is ready.
