গোয়ার রস অমলেট | Goan Ros Omelette | Indian Chicken Recipes


Instagram :- https://www.instagram.com/visual_cookbook/ Ros Omelette Prep time – 10 mins Cook time – 40 mins Serves – 4-6 Ingredients:- For spice mix:- • Kasmiri red chillies – 2 no • Bayleaf – 1 no • Cinnamon – 2 inch • Cardamom – 2 no • Cloves – 5 no • Star anise – 2 no • Coriander seeds – 2 Tsp • Coconut – ½ cup • Onion –1 no (sliced) • Tomato -1 no For omelette:- • Eggs – 4 no • Curry leaves – 5-10 no • Onion – ½ no (chopped) • Chillies – 2 no • Salt – 1 Tsp • Pepper – 1 Tsp For gravy :- • Oil – to cook • Onions – 3 no • Garlic – 5 cloves (chopped) • Chicken mince – 500 g • Salt and pepper – to taste Method:- For spice mix :- • Toast the spices till fragrant • Toast the cocnut till golden • Fry the onions till golden and crispy • Add all the ingredients in a blender and make a fine paste For omelette :- • Saute the curry leaves, onions and chillies till soft • Mix all the ingredients together • Cook into thin omelettes in batches • Cut into quarters For gravy :- • Heat oil, add in the onions and saute till golden • Add in the garlic and cook well • Add in the chicken mince and cook on high heat till they have a good colour. Make sure to break up the mince well • Season to taste • Add in the spice paste and cook well with the mince for 5 mins • Add water according to the amount of gravy and simmer for 10 mins • Add coriander leaves to finish For plating:- • Add the mince gravy till halfway of the serving dish • Layer with quartered omelettes • Top of with more mince gravy • Garnish with coriander, onion chopped and lime wedge #CreatingForIndia #india #chickencurry
