We love pumpkin pie! ? In fact, we love pumpkin spiced anything! One of our favorite Fall desserts is what we call Pumpkin Ice Cream Dessert, and it is absolutely DELICIOUS!
Our great grandma made this for our grandma when she was young, and our grandma made it for our mom when she was little. Now our mom makes it for us. We are certain we will make this for our own families one day… it’s a family Thanksgiving tradition!
Pumpkin Ice Cream Dessert Recipe-
Graham Cracker Crust:
* 14 graham crackers rolled fine, or 2 C of crumbs
* 1 Tbsp flour
* ½ C melted butter
* ½ C sugar
* ¾ tsp cinnamon
Mix dry ingredients first, then add in the melted butter. Mix thoroughly {mixture will be crumbly}. Save ½ C of crumbs to sprinkle on top. Pour crumble mixture into the bottom of 9×13 glass baking pan, and press the crumble until it forms a nice crust. Bake in over at 325 F for 5 minutes. Then let cool.
Pumpkin Ice Cream Filling:
* 1 ¾ C canned pumpkin (1 regular soup-sized can)
* ½ C br. sugar
* ½ tsp salt
* 2 tsp cinnamon
* ½ tsp ginger
* 1/8 tsp cloves
* ½ gallon vanilla ice cream {softened}
In a mixer, add in all ingredients together, including the ½ gal. softened vanilla ice cream. Blend only until all ingredients are mixed, not any longer. Immediately pour ice cream mixture into the graham cracker crust, spreading until even. Sprinkle on top the remaining graham cracker crumbs, and freeze for a few hours. If your freezer freezes very solid, remove dessert to refrigerator so it can soften slightly, about ½ hour before serving.
