मटके वाला चिकन करी | POT CHICKEN RECIPE – I set out to make roast chicken but seeing the size of the chicken that landed in my kitchen, I changed my mind and ended up making Pot chicken instead 🙂

POT CHICKEN RECIPE
Preparation time 10 minutes
Cooking time 30-35 minutes
Serve 2-4

Ingredients
For Fried Onion
3-4 medium size Onion, sliced, प्याज
Oil for frying, तेल तलने के लिए

For Chicken Marination
1 whole Chicken, (cut into big pieces)चिकन
Salt to taste, नमक स्वादअनुसार

For Curd Mixture
1 ⅓ cup Curd, beaten, दही
½ tsp Shahi jeera, शाही जीरा
½ tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर
1 ½ tbsp Coriander powder, धनिया पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
2 no Green cardamom, हरी इलायची
1 Black cardamom, बड़ी इलायची
4-5 Cloves, लॉन्ग
5-6 Black peppercorns, काली मिर्च के दाने
1 Bay leaf, तेजपत्ता
few Mint leaves, roughly torn, पुदीना पत्ता
few Coriander leaves, roughly torn, धनिया पत्ता
1 tbsp tender Coriander stems, chopped, धनिया के डंठल
½ tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
Salt to taste, नमक स्वादअनुसार
½ cup fried Onion, तला हुआ प्याज
¼ cup fried Onion oil, तले हुए प्याज का तेल
Marinated Chicken, मैरिनेटेड चिकन
Little water, पानी

Other Ingredients
few fresh Mint leaves, roughly torn, पुदीना पत्ता
few Coriander leaves, roughly torn, धनिया पत्ता
Coal, कोयला

For Garnish
1 inch Ginger, julienned, अदरक
Coriander sprig, धनिया पत्ता

Process
For Fried Onion
Cut onion into thin slices and ensure they are almost of the same thickness.
Heat oil in a kadai, add a few onion slices at one time and deep fry until crisp and golden in color.
Transfer them to an absorbent paper. Keep aside for further use.

For First Marination
In a bowl or a tray place the chicken pieces and add salt to taste and marinate well and keep aside for further use.

For Curd Mixture
In a bowl, add curd, shahi jeera, degi red chilli powder, coriander powder, turmeric powder.
Add green cardamom, black cardamom, cloves, black peppercorns, bay leaf.
Now, add fresh mint leaves, coriander leaves, tender coriander stems, ginger garlic paste.
Add salt to taste, fried onions, fried onion oil and mix it well nicely.
Then add the marinated chicken into it and mix it properly.
Mix well and Keep it aside for further use.

For Gravy
In a handi, add marinated chicken, little water and cover it with the lid.
Seal the end of the handi by applying wheat dough across the pot rim to seal it properly.
Keep coals over the lead and let it cook from above.
Place the handi on a slow flame and let it cook for 30 to 40 minutes.
Open the seal and remove lead, add mint leaves, coriander leaves and once again cover it with the lead and mix well.
Now, add ginger julienned and mix well.
Garnish with coriander sprig and serve hot with roti or paratha.
